This is a recipe I obtained from my pastor's wife. She brought this to our last potluck and it was a huge hit. Ingredients:
14-1/2 ounce can chicken broth |
1/4 cup raisins |
3/4 teaspoon salt |
1/4 teaspoon ground cumin |
1/4 teaspoon ground black pepper |
16 ounce can pears drained and chopped |
1 tablespoon fresh lemon juice |
1 cup uncooked couscous |
1/3 cup sliced almonds |
2 tablespoons chopped fresh cilantro |
1 tablespoon butter |
Directions:
1. In medium saucepan combine broth, raisins, salt, cumin and pepper then bring to a boil. 2. Remove from heat then stir in pears, lemon juice, couscous, almonds, cilantro and butter. 3. Cover and let stand 10 minutes then stir before serving. |
