Joan, my mother-in-law, introduced this yummy soup to me. Ingredients:
1 onion, diced |
1 garlic clove, chopped |
32 ounces chicken broth |
1 1/3 cups peanut butter |
1/2 cup orzo pasta |
8 ounces snow peas |
2 -4 teaspoons curry powder |
12 ounces chicken, cooked and diced |
Directions:
1. In large saucepan, combine the broth, garlic,and onion. Cook until onion is very tender. 2. Add peanut butter and curry powder; simmer 5 minutes. 3. Add snow peas, orzo, and chicken and cook until orzo is tender. 4. Good served with scallions scattered on top of soup in bowl. |
