Peanutty Chocolate Truffles

My niece gave me this last year - she said her family had become addicted to them. While I haven't tasted them yet, she's never given me a recipe I didn't fall in love with! They are a breeze to prepare, and quick can be perfect during this busy time of year.
Ingredients:
3/4 cup creamy peanut butter
1/4 cup butter, softened
1 teaspoon vanilla extract
1/3 cup powdered hot cocoa mix
1 cup powdered sugar
1 cup finely chopped cocktail peanuts
Directions:
1. Using a blender or mixer or food processor, mix peanut butter, butter and vanilla extract in a medium bowl until mixture is light and creamy.
2. Combine powdered cocoa mix and powdered sugar in another bowl, and then stir it into the peanut butter mixture.
3. Place chopped peanuts in a shallow dish.
4. Roll peanut butter mixture into 11/2” balls, and then roll them in the peanuts to coat evenly.
5. Place truffles on wax paper lined baking sheets.
6. Refrigerate until firm.
7. When chilled, store truffles in air-tight container and keep cool or refrigerate.
