Peanuts With Indian Spices |

Snack or salad topping. Ingredients:
6 cups unsalted dry-roasted peanuts |
3 tablespoons black sesame seeds |
3 large egg whites |
2 tablespoons ground coriander |
2 tablespoons brown sugar |
1 tablespoon ground cumin |
1 1/2 teaspoons salt |
1/2 teaspoon black pepper |
1/2 teaspoon ground red pepper |
Directions:
1. Preheat ove to 300. 2. Combine coriander, brown sugar, cumin, salt, black pepper and red pepper in a small bowl. 3. Beat egg whites in a medium bowl for 1 minute or until frothy. Add spice mixture, peanuts and black sesame seeds and stir well. 4. Spread on silpat in a pan in single layer, use 2 if needed. 5. Bake for 30 minutes or until nuts are dry and roasted, stirring occasionally. 6. Cool completely. |
