Different and very tasty. Ingredients:
1/3 cup tomato paste |
3/4 cup chunky unsalted peanut butter |
1 cup unsalted chicken broth |
3 tablespoons peanut oil |
2 to 3 chicken legs and thighs separated. can be skinless, if desired. |
1 bone in chicken breast, cut in half |
1 large yellow onion, chopped |
cayenne pepper ( to taste ) i used one teaspoon |
black pepper ( to taste ) i used one teaspoon |
dried thyme( to taste) i used 1/2 teaspoon |
2 bay leaves |
serve with rice or couscous |
Directions:
1. Combine tomato paste and peanut butter in a bowl 2. Gradually add chicken broth until mixture is smooth and well blended 3. Set Aside 4. Heat oil over medium high heat, saute chicken until browned on all sides 5. Transfer chicken to separate bowl 6. Add onion to skillet, cook until soft, about 5 minutes 7. Pour peanut butter mixture into skillet with onions 8. Add cayenne pepper, black pepper and thyme. Add Bay leaves. 9. Return chicken to skillet, bring mixture to boil, immediately turn heat to simmer 10. Cover and simmer until chicken is done, about 30 minutes |
