Ingredients:
2 tablespoons butter or margarine |
2 tablespoons grated onion |
1 celery rib, minced |
2 tablespoons all-purpose flour |
3 cups chicken broth |
1/2 cup creamy peanut butter |
1/2 cup half-and-half |
2 tablespoons chopped roasted peanuts |
Directions:
1. Melt butter in a large saucepan over medium heat; add onion and celery, and saute 5 minutes. Stir in flour, and cook, stirring constantly, 1 minute. 2. Add broth; bring to a boil, stirring constantly. Reduce heat; simmer 30 minutes. 3. Stir in peanut butter and half-and-half. Cook over low heat, stirring constantly, 3 to 4 minutes or until heated. Sprinkle with peanuts. |
