Peanut Sesame Noodles

Ingredients:
12 ounces spaghetti or 12 ounces linguine
1/4 cup soy sauce
1 cup chicken broth
1/2 cup peanut butter
1 tablespoon sesame oil
1 tablespoon honey
2 teaspoons garlic, minced
2 cups broccolini, slaw or 2 cups packaged coleslaw mix
1 cup carrot, grated
2 cups cooked chicken, diced (optional)
Directions:
1. Bring a large pot of salted water to a boil and then add pasta to pot. Cover with a lid for faster boiling. In a microwave-safe bowl or measuring cup, stir together soy sauce, peanut butter, chicken broth, sesame oil, honey and garlic. Microwave on high for 2 to 2 1/2 minutes to melt peanut butter. Stir and reserve. During last 3 minutes of pasta cooking time, add the broccoli and carrot. Drain quickly, but do not rinse. Return to pot and toss with chicken and peanut sauce.
