Gingery and slightly spicy, this is my family's favorite peanut sauce. Ingredients:
1/4 cup vegetable oil |
1 cup chopped onion |
2 cloves garlic, minced |
2 tablespoons minced fresh ginger root |
1 jalapeno pepper, seeded and minced |
1 cup peanut butter |
1 1/4 cups water |
1/4 cup tamari or soy sauce |
3 tablespoons honey |
1/4 cup fresh basil leaves, cut into thin strips |
3 fresh basil leaves for garnish (optional) |
Directions:
1. Heat the vegetable oil in a skillet over medium heat. Stir in onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic, jalapeno pepper, and ginger; cook and stir for 2 minutes more. 2. Stir in peanut butter, water, tamari, and honey until smooth. Add shredded basil. Heat through, and remove from heat. Garnish with whole basil leaves, if desired. |
