Udon noodles with vegetables and peanut sauce Ingredients:
14 oz. tofu |
8 oz udon noodles |
1 large red pepper |
1 bunch broccoli |
2 green onions |
3 carrots |
1/4 c peanut butter |
3 tbsp soy sauce |
3 tbsp peanut oil |
1 tbsp sesame oil |
Directions:
1. boil udon noodles in a pot of boiling water per package instructions. 2. sautee cubed tofu in a wok in the peanut oil until brown, stirring and shaking pan regularly to keep it from sticking 3. remove tofu and drain any excess oil from pan so just a thin coating remains 4. add vegetables and saute to desired tenderness, then remove from wok 5. add water (or stock) to pan, then stir in peanut butter, soy sauce, sesame oil and any other desired seasonings until smooth. Add drained udon noodles, tofu and vegetables and stir to coat. |
