If you want to have a little something to go with your raw veggies, this accompaniment is just what you've been looking for. For Phase 1. This came from The South beach Diet Cookbook. I have not tried this recipe.
Ingredients:
2 cups chopped unsalted dry roasted peanuts
1/2 cup plain fat-free yogurt
1/4 teaspoon finely grated lemon peel
salt
Directions:
1. In a blender or food processor, combine the peanuts, yogurt, lemon peel, and salt to taste, and process until smooth.
2. Enjoy!
