Yum! Ingredients:
1/2 cup water, plus |
1 tablespoon water, divided |
1/4 cup peanut butter |
3 tablespoons soy sauce |
1 tablespoon brown sugar |
2 -3 garlic cloves, minced |
2 tablespoons vegetable oil |
1 lb boneless skinless chicken breast, cubed |
3 cups broccoli florets |
1 tablespoon cornstarch |
hot cooked rice |
Directions:
1. In a small bowl, combine 1/2 cup water, peanut butter, soy sauce and brown sugar until smooth; set aside. In a skillet or wok, stir-fry garlic in oil for 30 seconds. Add the chicken; stir-fry for 5 minutes or until chicken juices run clear. Add broccoli; stir-fry for 5 minutes. 2. Stir in the peanut butter mixture; cook and stir until sauce is smooth and broccoli is crisp-tender, about 3 minutes. Combine cornstarch and remaining water until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice. |
