Ingredients:
1 romaine lettuce heart, chopped
1 1/4 cups chopped cooked chicken breast
3/4 cup frozen snow peas, thawed and trimmed
1/4 cup shredded carrot
1/4 cup chopped roasted lightly salted peanuts
1/2 cup light sesame-ginger dressing
8 (1-oz.) mini whole wheat pita rounds, halved
Directions:
1. Combine chopped lettuce and next 4 ingredients in a large bowl. Drizzle with sesame-ginger dressing; toss to combine. Fill each pita half evenly with mixture.
2. Note: For testing purposes only, we used Newman's Own Low Fat Sesame Ginger Dressing and Toufayan Bakeries Hearth Baked Whole Wheat Pitettes Pita Bread.
