PEANUT BUTTER WAFFLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dubach Estate in Combine, Texas in 1984. Ingredients:
1-1/2 cups whole wheat flour |
3/4 cup uncooked quick cooking oatmeal |
1 tablespoon baking powder |
1/2 teaspoon salt |
3/4 cup crunchy peanut butter |
1 tablespoon dark sesame oil |
1/4 cup sugar |
1/4 cup dark brown sugar packed |
2 egg whites lightly beaten |
2 cups milk |
2 teaspoons vanilla extract |
Directions:
1. Preheat a waffle iron and spray with nonstick vegetable coating. 2. In a large mixing bowl combine flour, oatmeal, baking powder and salt then mix well. 3. In another bowl combine peanut butter, oil and sugars then mix until completely blended. 4. Add egg whites and mix well then add milk a little at a time blending well after each addition. 5. Add vanilla and mix well again. 6. Pour liquid into dry ingredients and mix just until dry ingredients are moistened. 7. Immediately spoon 1/2 cup batter into the preheated waffle iron and bake for 7 minutes. 8. Repeat until all batter is used. |
