This comes from the Gooseberry Patch Catalog. A new twist on peanut butter cookies - with white chocolate! Prep time does NOT include chilling. Ingredients:
2 cups creamy peanut butter |
2 tablespoons butter, softened |
2 cups powdered sugar |
2 cups crispy rice cereal |
16-ounce package white melting chocolate, chopped |
Directions:
1. Blend peanut butter, butter and powdered sugar. 2. Add cereal and mix well. 3. Shape into balls by teaspoonsful. 4. Set balls on waxed paper. 5. Freeze for several hours, up to overnight. (I prefer to simply refrigerate overnight and not to freeze at all.) 6. Melt chocolate in a double boiler over medium-low heat; stir until smooth. 7. Dip balls into melted chocolate, return to waxed paper until set. 8. Recipe makes 4 to 5 dozen snowballs. |
