Peanut Butter Sandwich Cookies |

These little babies just melt in your mouth, they are so good. Ingredients:
1c flour |
1/2tsp baking soda |
1/2tsp baking powder |
1/2c cornstarch |
3/4c soft butter |
1c packed, brown sugar |
1/2c granulated sugar |
1 egg |
11/2c peanut butter |
filling |
11/2c icing sugar, sifted |
3oz (6tbsp) unsalted butter, softened |
3/4c smooth peanut butter |
3t heavy cream |
1/4c coarsely chopped roasted, unsalted peanuts |
1/4c coarsely chopped semisweet chocolate or mini choc. chips |
Directions:
1. COOKIES 2. Cream the butter and sugars until light and pale. Beat in the egg then the peanut butter. 3. Sift together dry ingredients; then fold into the peanut butter mixture just until blended. 4. Roll into 1 balls and place on greased or lined baking sheets; press down with a fork . 5. Bake at 250F for 12-15mins. Cool. 6. FILLING 7. In a small bowl cream the sugar, butter and peanut butter until smooth. 8. Add the heavy cream; beating until smooth and fluffy. 9. Stir in chopped peanuts and chocolate. 10. Sandwich 2 cookies with a scant teaspoon of the filling. 11. Store, sealed at room temperature or in the refrigerator. 12. ** I like to melt some semisweet chocolate and drizzle it over the finished cookies. |
