Peanut Butter Raspberry Pinwheels |

Bite into these sweet cookies. Mmmmm Ingredients:
1 crisco butter flavor stick or 1 cup butter flavored shortening |
1 cup creamy peanut butter |
3/4 cup sugar |
3/4 cup firmly packed brown sugar |
2 eggs |
1 tspn vanilla |
2 1/2 cups all-purpose flour |
1 tsp salt |
1 tsp baking soda |
1/2 cup seedless red raspberry jam |
2/3 cup very finely chopped peanuts |
Directions:
1. Combine shoetening,peanut butter,sugar & brown sugar in a large mixer bowl 2. Beat at medium speed of electric mixer until well blended. 3. Beat in eggs & vanilla 4. Combine flour & baking soda & add gradually to creamed mixture at low speed 5. Beat until well blended 6. Cut parchment paper to line 17x11 inch baking pan 7. Press dough out to edges of paper & spread with raspberry jam to within 1/2 inch of edges 8. Lift up long side of paper. Loosen dough with spatula & roll dough up jelly roll fashion. Seal the seam 9. Sprinkle paper with nuts & roll dough over nuts 10. Press on any extra nuts 11. Wrap in plastic wrap & place in plastic bag 12. Refrigerate over night 13. Pre-heat oven to 375 degrees 14. Grease cookie sheet 15. Unwrap dough & cut into 1/2 inch slices 16. Place slices 2 inches apart on cookie sheet 17. Bake 10 - 12 mins or until set 18. Cool for about 5 minutes on baking sheet & then remove to wire racks to cool completely |
