Peanut Butter Pumpkin Cookies |

These start with refrigerated cookie dough. They're very easy to make and can also be used as a centerpiece. From Fall Baking by Pillsbury Ingredients:
1 roll (16.5 oz) pillsbury create and bake refrigerated peanut butter cookies, room temp |
1 egg yolk |
1/2 c flour |
1/3 c orange sugar crystals |
14 twisted butter flavor pretzel sticks, broken in half |
Directions:
1. 350F oven Spray cookie sheets with cooking spray 2. In a medium bowl, stir cookie dough, egg yolk and flour until well mixed 3. Pour sugar crystals into a small bowl 4. Shape dough into 28 1 inch balls; roll in sugar crystals 5. Insert 1 pretzel piece into each ball for stem 6. Using a toothpick or tip of a spoon, make lines around side for pumpkin ridges 7. Place balls on cookie sheets 8. Bake 9 - 11 minutes or until just set in center when touched with fingertip 9. Cool 2 minutes; remove from cookie sheets to cooling racks 10. Cool completely 11. For a centerpiece: 12. Toss some flaked coconut with drops of diluted green food color 13. Sprinkle the coconut on a platter to represent grass and arrange pumpkins on top |
