A pudding recipe that I found in a Southern Living magazine (January 2000). Great for peanut butter lovers Ingredients:
1/2 cup sugar |
2 tablespoons cornstarch |
1/4 teaspoon salt |
1 1/2 cups milk |
1/2 cup half-and-half |
3/4 cup creamy peanut butter |
1 teaspoon vanilla extract |
whipped cream |
chocolate curls |
Directions:
1. Combine first 3 ingredients in a medium-size heavy saucepan; gradually whisk in milk and half-and-half. 2. Bring to a boil over medium heat, whisking constantly. 3. Boil, whisking constantly, 1 minute. 4. Remove from heat (pudding will be thin). 5. Add peanut butter and vanilla, whisking until smooth. 6. Pour into a bowl; place plastic wrap directly over warm pudding. 7. Chill 2 hours. 8. Garnish, if desired. |
