These pancakes are off the hook. I add extra flour just to make them thicker. Ingredients:
1 1/2 cups flour |
6 tablespoons sugar |
2 teaspoons baking powder |
1/4 teaspoon salt |
1 1/4 cups milk |
1/4 cup peanut butter |
1 tablespoon olive oil |
1/2 teaspoon vanilla extract |
2 eggs, beaten |
Directions:
1. Combine flour, sugar, baking powder and salt in a large bowl. 2. Combine milk and remaining ingredients. 3. Add to flour mixture. 4. Stir until smooth. 5. Pour 1/4 cup batter onto griddle for each pancake. 6. Cook until tops are covered with bubbles and edges are cooked. 7. Flip pancake and cook other side. 8. Serve warm. |
