You probably should plan on doubling this recipe as it is very addictive. The good news is that it is so easy you can make more!
Ingredients:
4 tablespoons butter
1 cup chunky peanut butter
1/2 cup honey
1/2 cup packed brown sugar
1 teaspoon vanilla
1/2 teaspoon salt
3 1/2 cups rolled oats (do not use quick-cooking)
Directions:
1. Preheat oven to 375 degrees. Have an ungreased rimmed baking sheet at hand.
2. Combine butter, peanut butter and honey in a microwave-safe bowl. Microwave on HIGH for 1 minute, then stir. Mixture should be smooth and thick; if needed, microwave on HIGH for another minute.
3. Add brown sugar, vanilla and salt, stirring until smooth, then add oats and mix until evenly coated.
4. Spread mixture evenly on baking sheet and bake for 10-15 minutes, or just until browned and crisp.
5. Let cool on baking sheet, then break it up into bite-sized pieces.
6. Store in an airtight container.
7. Granola may be stored at room temperature for up to 2 weeks or it can be refrigerated for up to 1 month BUT it won't last that long!
