Peanut Butter French Toast |

Looking for something a little different, I decided to add some peanut butter to French toast. I used unsweetened almond milk since I had some on hand, but you could use regular milk, too! Can be served with syrup, honey, powdered sugar or your choice of chopped fruit (apples and bananas go great with peanut butter! Read more !) This is not very sweet on it's own, so add whatever you like for toppings Ingredients:
4 thick slices bread (texas toast, french, italian, portuguese sweet bread, etc) |
2/3 cup unsweetened almond milk |
1/4 cup egg white (about two large) |
1/4 cup natural peanut butter, creamy or chunky, softened |
1 tsp vanilla |
1/2 tsp cinnamon |
1 tbsp butter or margarine |
Directions:
1. Whisk together almond milk, egg whites, peanut butter (make sure it's very soft - I heat in the microwave for about 30 seconds since I keep my pb in the fridge), vanilla and cinnamon. 2. Melt butter on griddle over medium heat. Dip bread slices in peanut butter mixture, letting each side sop some up. Place on griddle and cook about 3 to 4 minutes each side or until golden brown. 3. Serve with desired toppings and/or fruit. |
