Peanut Butter Corn Chowder |

Don't let the name scare you. It is very good Ingredients:
2 tablespoons butter |
1/2 cup celery, chopped fine |
1/2 cup onion, chopped fine |
1/2 cup chunky peanut butter |
1 (14 1/2 ounce) can chicken broth |
1 (10 ounce) box frozen corn |
1 cup light cream or 1 cup half-and-half |
Directions:
1. Saute onion and celery in butter till tender. 2. Remove from heat and add peanut butter stirring until melted. 3. Stir in broth and corn. 4. Bring to a boil stirring frequently. 5. Reduce heat and simmer for 10 minutes, stirring occasionally. 6. Remove from heat and stir in cream. 7. Reheat just until hot not allowing to come to a boil. |
