I've made these Cookies for YEARS, we love Peanut Butter Cookies.. these are so good, you will not be able to eat just one! Old Cookbook from the 40's. Ingredients:
1 cup butter flavor shortening (crisco is good) i use half real butter |
1 cup granulated sugar |
1 cup brown sugar (i use splenda brown sugar now) |
2 eggs slightly beaten with fork |
1 teaspoon vanilla extract |
1 cup skippy peanut butter (natural peanut butter is not recommended) |
2 to 3 cups all-purpose flour, less flour makes richer cookies. |
2 teaspoons soda |
1/2 teaspoon salt |
1/2 cup sugar in small bowl for rolling cookie balls before baking. |
Directions:
1. Cream together shortening, sugars, eggs and vanilla extract. Stir in 2. peanut butter. Stir flour into creamed mixture. 3. Make walnut sized balls, roll in sugar and place on un-greased cookie sheet. Press with back of sugared fork to make crisscross. 4. Bake in moderate oven (350° F) about 10 minutes. makes about 5 dozen fantastic cookies. |
