Southern Living; a simple, basic cookie that my kids love. Ingredients:
1 cup shortening |
1 cup sugar |
1 cup firmly packed brown sugar |
2 eggs |
2 tablespoons water |
3 cups all-purpose flour |
1 1/2 teaspoons baking soda |
1/4 teaspoon salt |
1 cup crunchy peanut butter |
Directions:
1. Cream shortening; gradually add sugar, beating until light and fluffy. 2. Add eggs and water, beating well. 3. Combine dry ingredients; add to creamed mixture, beating well. 4. Stir in peanut butter. 5. Shape into 1-inch balls; place 3 inches apart on ungreased cookie sheets. 6. Dip a fork in flour, and flatten cookies to 1/4-inch thickness in a crisscross pattern. 7. Bake at 375° for 10-12 minutes. 8. Remove to wire racks, and cool completely. |
