Delicious Peanut Butter Cookie recipe- good for high altitude Ingredients:
2 lbs butter |
1 lb 5 oz sugar |
1 lb 5 oz brown sugar |
3 lbs 5 oz peanut butter |
7 eggs |
3 lbs pastry flour |
2 1/2 teaspoons salt |
2 teaspoons baking soda |
Directions:
1. Soften butter to room temperature on counter. Not in microwave. 2. Scrape bowl often and well. 3. Cream butter, sugars, and peanut butter until fluffy with paddle in large mixer. No chunks of butter. 4. Add Eggs. 5. Continue to paddle until smooth and fluffy. 6. Combine dry ingredients and mix until moistened throughout. 7. Scrape bottom of bowl to ensure well-mixed. 8. Portion approximately 4 oz of dough in a ball. Place on cookie sheet (non-stick/sprayed) and flatten to about 1/2 thick. 9. Bake 14 minutes at 300 degrees. |
