Except for pies & bread, my wife does most of the baking. I'm a dunker & I LOVE to quickly dunk these in a cup of coffee w/ cream...MMMMMMMMMMMMMM!!!!!! Ingredients:
1 cup granulated sugar |
1 cup light brown sugar |
1 cup butter, soft but not melted |
1 cup peanut butter (i prefer smooth) |
2 large eggs |
2 teaspoons baking soda |
2 1/2 cups unbleached flour |
1 teaspoon salt |
Directions:
1. Preheat oven to 350°. 2. Cream together the butter & sugars. 3. Add the eggs & beat. 4. Add the Peanut Butter & beat again. 5. Sift together the flour, baking soda & salt & add to mixture. 6. Mix until well blended, being careful NOT to overmix! 7. Roll into balls about the size of a Walnut & place on cookie sheet about 11/2 inches apart. 8. Take a heavy glass or pint jar & dip the bottom of it in a small amount of sugar & lightly mash down each ball. If desired, take a fork & press down a little bit more to make a criss-cross design on top. 9. Bake 12-15 minutes. |
