Susan Smalenburger at my office makes these - delicious!!!! Ingredients:
1 cup butter, softened |
1 cup granulated sugar |
1 cup brown sugar, packed |
1/2 teaspoon salt (if using unsalted butter) |
1 teaspoon baking soda |
2 eggs, well beaten |
1 cup chunky peanut butter |
2 cups sifted flour (i have never sifted it!) |
Directions:
1. Combine butter, soda, and peanut butter. Mix well. 2. Add granulated sugar, then brown sugar and mix well. Add beaten eggs, mixing well. Add flour and blend. 3. Take 1 tsp of dough and roll in a ball. Drop. 4. balls on buttered baking sheets (never did that either, I have. 5. non-stick). 6. Press cookies lightly with fork to flatten. If dough. 7. sticks to fork, dip fork into a little flour (or sugar). 8. Bake at 325 degrees for 15-20 minutes. (That depends on how hot your oven is-and mine is hot-oh, not surprising!) Enjoy. |
