Ingredients:
2 cups all-purpose flour
1/2 cup sugar
2 t. baking powder
1 t. salt
3/4 cup creamy peanut butter
1 large egg, beaten to blend
1 cup milk
Directions:
1. Preheat oven to 350 degrees.
2. Mix flour, sugar, baking powder and salt in a large mixing bowl. Cut in peanut butter with a fork. Add egg and milk. Stir just until moistened.
3. Pour batter into prepared pan. Bake 60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes. Turn loaf out onto rack and cool completely.
4. Per serving: 255 calories, 9 g protein, 33 g carb, 2 g fiber, 11 g fat (2 g sat.), 23 mg cholesterol, 438 mg sodium.
