These are amazing and delicious bar cookies. I always get SO many compliments when I make these. Be careful, they go FAST, despite the fact that this recipe makes so many! Ingredients:
1 cup butter |
1 cup sugar |
1 cup brown sugar |
2/3 cup peanut butter (i use creamy) |
2 eggs |
1 teaspoon vanilla |
2 cups flour |
2 cups oats (old fashioned or quick cooking) |
1 teaspoon baking soda |
1/2 teaspoon salt |
3 cups powdered sugar |
4 tablespoons cocoa |
4 tablespoons soft butter |
2 -3 tablespoons milk |
1 teaspoon vanilla |
Directions:
1. Cream butter and sugars. 2. Mix in peanut butter, eggs and vanilla. 3. In a separate bowl combine flour, oats, baking soda and salt. 4. Combine two mixtures together. 5. Press evenly into a 15x10x2 cookie sheet (jelly roll pan). 6. Bake at 350°F for 15-18 minutes (till golden brown). 7. Mix the frosting ingredients together. 8. Spread the frosting over the warm bars. 9. Occasionally the frosting will be a little hard to spread. When this happens, I add either milk, or I microwave the frosting for 10-20 seconds and it is a lot easier to work with. |
