Peanut Butter Banana Honey Muffins |

These tasty, healthy, lightly sweet & satisfying treats are based off of a recipe I found on Tasty Kitchen by Laura | Tutti Dolci. Ingredients:
1 cup ap flour |
3/4 cups whole wheat flour |
1 tsp baking powder |
1 tsp baking soda |
1/4 tsp salt |
1/2 tsp cinnamon |
2 medium over-ripe bananas |
2/3 cup plain greek yogurt (i used fage 0%) |
1 large egg |
3/8 cup milk (i used skim) |
1/3 cup creamy peanut butter |
1/3 cup honey |
1 tsp vanilla |
2 tsp sugar |
1/4 tsp cinnamon |
Directions:
1. Preheat oven to 375F. Line muffin tin or prepare with cooking spray. 2. Combine flours, baking powder & soda, salt & cinnamon in a large mixing bowl. 3. In a separate bowl, mash bananas (don't pulverize them!). Add yogurt, egg, milk, pb, honey & vanilla. Mix to incorporate. Add wet ingredients to dry and mix just until incorporated. 4. Combine sugar & cinnamon in a small bowl. 5. Spoon into muffin cups, about 2/3 full. Sprinkle each with cinnamon sugar. 6. Place in middle rack of oven and bake for 15-18 minutes, until tops are golden brown & a toothpick inserted in the center comes out clean. 7. Store in an air-tight container. |
