Peanut Butter Banana Bread with Chocolate Chips |

A nice, not too sweet, not too banana-ey, not too peanut buttery yummy sweet bread! My new favourite banana bread! Ingredients:
1 1/4 cups all-purpose flour |
3/4 cup whole wheat flour |
1 1/2 cups brown sugar |
2 tsp baking powder |
1 tsp baking soda |
1/2 tsp salt |
4 medium bananas, mashed |
2/3 cup peanut butter, unsweetened, crunchy |
1/2 cup plain fat-free yogurt |
2 large eggs |
1/4 cup canola oil |
1 1/2 cups chocolate chips, semisweet |
Directions:
1. Preheat oven to 350F. Coat 2 standard loaf pans with cooking spray. 2. Combine flour, sugar, baking powder, baking soda, and salt in large bowl. 3. Whisk together mashed bananas, peanut butter, yogurt, egg and oil. 4. Stir banana mixture into flour mixture until combined. Fold in chocolate chips. Scrape batter into prepared loaf pans. 5. Bake 40-50 minutes, or until toothpick inserted in centre comes out with a few moist crumbs clinging to it. Cool on rack 15 minutes before unmolding. Cool completely, then slice and serve. |
