In all honesty, I 've never tried these. But if I had little ones, you bet I would. (My husband would love them...but he doesn't need them.) I hope someone out there can get some enjoyment out of this recipe. Read more From, Women's Day Magazine 2002. Ingredients:
1 c creamy peanut butter |
1 1/3 c warm water |
1 box (1 lb. 2.25 oz.) yellow cake mix |
3 large eggs |
2 tbl. oil |
1/2 c strawberry jam |
Directions:
1. Heat oven to 350 degrees. 2. Line 24 muffin cups with paper or tin foil liners. 3. Put peanut butter and water in a large bowl. Beat with mixer on low speed until well blended. 4. Add cake mix, eggs and oil; beat on low speed 1 minute to combine. Increase speed to medium and beat 2 minutes or until thickened and smooth. 5. Spoon into lined cups. 6. Place a tsp. strawberry jam on top middle of each and press jam down slightly with back of spoon. 7. Bake 20 to 22 minutes until a wooden pick inserted near center of cupcakes comes out clean. 8. Cool in pan on a wire rack 5 minutes before removing cupcakes from pan to rack to cool completely. |
