The standby favorite sandwich in a delicious cookie bar. Use any flavor of jam, jelly or preserves you like best. In the photo I used apricot preserves. I belong to a task force known as PB&J (no relation to food) and made these to surprise the rest at a meeting. Read more . They were a huge hit! Ingredients:
2 sticks butter, at room temperature |
1-1/2 cups sugar |
1 tsp. vanilla |
2 eggs, at room temperature |
2 cups peanut butter (creamy or chunky) |
3 cups flour |
1 tsp. baking powder |
1 18-oz jar jam, jelly or preserves, any flavor |
2/3 cups peanuts chopped (salted or unsalted) |
Directions:
1. Preheat oven to 350 degrees F. 2. Grease and flour a 9 X 13 inch cake pan 3. In the bowl of an electric mixer, cream the butter and sugar at medium speed about 2 minutes 4. With the mixer on low speed, add vanilla, eggs and peanut butter and mix until blended 5. In a medium bowl, whisk together the flour, baking soda and salt 6. With the mixer on low speed, slowly add the flour mixture and mix until just combined 7. Mixture will be fairly dry 8. Spread approximately 2/3 of the dough into the prepared pan and press evenly into the bottom 9. Spread the jam evenly over the dough 10. Sprinkle the peanuts evenly over the jam 11. With fingers, crumble the remaining dough evenly over the jam 12. Bake at 45 minutes or until golden brown 13. Cool completely before cutting into squares |
