I make this once a month using salted in the shell peanuts. (Shelled) I found it in my Kenmore Microwave Cookbook. Circa1984. Ingredients:
1 cup white sugar |
1/2 cup white corn syrup |
1/2 to 2 cups unsalted dry roasted peanuts |
1 tsp. vanilla |
1 tsp. butter |
1 tsp. baking soda |
Directions:
1. Spray large cookie sheet with cooking spray, set aside. 2. Combine sugar and syrup in a 2 quart miicro-safe glass bowl. 3. Cook 4 minutes at high power. 4. Stir in peanuts and cook 4 minutes more. 5. Stir in butter and vanilla and cook 2 more minutes. 6. Stir in baking soda until foamy and spread on greased pan. 7. Stretch with palms of hands as it cools. (I never have any luck at this step, so I skip it) 8. Allow to cool, break into pieces, and store in an airtight container. |
