Peanut and Spice-Covered Pork Tenderloin |

This is a very tasty dish, and a different way to serve pork. Delicious served with spaghetti squash. Ingredients:
1 1/2 tablespoons olive oil |
1 pork tenderloin, rinsed and patted dry (1-1 1/4 lbs) |
1 teaspoon ground ginger |
1 teaspoon ground coriander |
4 tablespoons peanuts, finely chopped |
1 teaspoon kosher salt |
2 teaspoons honey |
2 teaspoons dijon mustard |
Directions:
1. Preheat oven to 350°F 2. In a 12-inch ovenproof sauté pan, heat olive oil over medium-high heat. Add pork, and brown all sides, turning often to prevent burning, about 3 minutes total. 3. In a small bowl, combine ginger, coriander, peanuts, and salt; mix well, and spread out on a baking sheet. Set aside. 4. Place honey and mustard in another small bowl; stir to combine. With a rubber spatula, spread honey mixture all over pork, coating lightly. 5. Roll pork in nut mixture, pressing firmly to adhere. Return pork to sauté pan, and transfer to oven. 6. Finish cooking, 25-30 minutes or until internal temperature of pork registers 155F on a meat thermometer. 7. Remove from oven; let sit 5 minutes. Cut into 1/4-inch thick slices; sprinkle with any topping that has fallen off. |
