This recipe is a family favorite that we make just about everytime we grill out. Not only is it pretty on the platter with all the great colors, it is tasty and a crowd pleaser with all the great tastes. My niece named it peacock because of all the different colors. Read more . Enjoy Ingredients:
2 purple onions cut into eighths |
2 small yellow squash cut in 1/2 strips |
2 small zucchini cut in 1/2 strips |
1 each red, yellow and green bell pepper cut in 1/2 strips |
4 cloves garlic sliced thin |
2 tablespoons minced fresh parsley |
1 tablespoon balsamic vinegar |
1 tablespoon olive oil |
1/2 teaspoon dried oregano or 3 tablespoons fresh |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Place onions, squash, bell peppers and garlic in a bowl and toss well. 2. Combine remaining ingredients in a lidded jar and shake well. 3. Pour over vegetables and toss then spoon into greased baking dish. 4. Bake at 425 for 20 minutes stirring every 5 minutes. 5. Serve warm or at room temperature. |
