My friend Suze gave me this recipe when she taught me about rose hips. I don't know where she got it but it is tasty. Ingredients:
1 3/4 c ap flour |
1/2 c light brown sugar |
1/2 c walnuts |
1 t baking soda |
1/2 t salt |
1/4 t cinnamon |
1 c fresh peaches |
2 eggs |
1/2 c light olive oil |
1/3 c buttermilk |
1/2 c dried rose hips |
2 t good quality vanilla extract with seeds |
cream cheese frosting -optional |
rose petals washed & chopped -optional |
Directions:
1. Preheat oven to 425 degrees. 2. Grease twelve muffin pan cups, or line them with cupcake wrappers. 3. In large mixing bowl, combine first six ingredients. 4. In another bowl, mash peaches with a potato masher, add rose hips to the mashed peaches, let sit about 10 minutes, then stir in remaining ingredients. 5. Add peach mixture to flour mixture and stir just until ingredients are moistened. 6. Spoon the batter into muffin pan. 7. Bake 15 to 18 minutes or until tops are golden. 8. When cooled you can frost them and top with the chopped rose petals. |
