Peachy Keen Ginger Pork Loin |

From Oxygen Magazine. Ingredients:
3 lbs pork loin |
3 cups chopped fresh peaches |
1 cup orange marmalade (fruit only) |
3 teaspoons lemon juice |
3/4 teaspoon ground ginger |
3/4 teaspoon dry mustard |
1/4 teaspoon ground cinnamon |
1/4 cup low sodium soy sauce |
Directions:
1. Preheat oven to 350 degrees. 2. In a small bowl, mix together peaches, marmalade, lemon juice, ginger, mustard, cinnamon and soy sauce. 3. Place pork in medium baking dish; glaze pork with peach mixture, using it all. 4. Roast in oven for approximately one and a half hours; serve. |
