If you over indulged over the Holidays, and need something light to eat.... This is the recipe for you! Ingredients:
1 head romaine, torn in bite size pieces |
3c. fresh spinach torn in bite size pieces |
1 1/2c. cooked roast beef cut in strips |
3 fresh med. peaches, peeled, pitted, and sliced |
1 med. ripe avocado, peeled, pitted, and sliced |
12 cherry tomatoes, halved |
1/2c. extra virgin olive oil |
3tbs. vinegar |
1tbs. prepared horseradish |
1/2tsp. salt |
1/2tsp. worcestershire sauce |
1/8tsp. white pepper |
2 drops bottled hot pepper sauce |
Directions:
1. In salad bowl combine first 6 ingredients. 2. In screw-top jar combine remainder ingredients. Cover and shake well. 3. Just before serving, pour dressing mixture over salad; toss lightly. |
