Peaches Stuffed With Almond Cheese |

This is an unusual way to serve fresh peaches. Ingredients:
3 medium ripe and juicy peaches |
3 ounces cream cheese, softened |
1/3 cup toasted, slivered almonds |
6 fresh mint leaves |
Directions:
1. Cut each peach in half and remove the pit. 2. Enlarge the cavity left by the peach pit by scooping out a little of the peach pulp. Save the pulp that was removed. 3. Whip the cream cheese until it is smooth and then beat in the peach pulp. 4. Stir the almonds into the cream cheese-peach mixture. 5. Spoon even amounts of the cream cheese mixture into the the cavity of each peach. Garnish with a mint leaf. 6. Chill, if desired. But for best flavor, serve at room temperature. |
