Peaches, Bocconcini Ands Prosciutto Salad |

Peaches are a delicious way to dress up a summer salad! Combine sliced peaches with mixed greens, dried prosciutto, bocconcini cheese and chopped basil. Drizzle with our peach-kissed vinaigrette and enjoy!! Ingredients:
8 cups mixed salad greens (spring mix, arugula, baby spinach, etc) |
3 ounces prosciutto or 3 ounces bacon, cooked and diced |
2 cups europe's best sun ripe harvest peaches, thawed |
1 cup bocconcini, pearl size (or regular bocconcini, sliced) |
1/4 cup basil, chopped |
1/3 cup white balsamic vinegar or 1/3 cup apple cider vinegar |
1 garlic clove |
1 tablespoon honey |
1/4 cup europes best sun ripe harvest peach, thawed |
salt and pepper |
2 tablespoons olive oil |
Directions:
1. VINAIGRETTE: Combine first 5 ingredients in blender. Add olive oil and blend until smooth. 2. Arrange salad ingredients on platter and drizzle with vinaigrette. Refrigerate any remaining vinaigrette. |
