A different spin for this cakey dessert baked in a pie dish
Ingredients:
3/4 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1 (3 1/2 ounce) package vanilla pudding (not instant)
1/2 cup sugar + 1 tbs
1/2 tsp cinnamon
3 tbs butter or margarine, softened
1 egg
1/2 cup milk
1 (15 ounce) can sliced peaches, drained with 3 tbs juice reserved
1 (8 ounce) package cream cheese, softened
Directions:
1. Combine flour, baking powder, salt, pudding mix, butter, egg and milk; beat with electric mixer for 2 minutes.
2. Pour into greased 9 deep dish or regular pie pan.
3. Place peach slices over the batter.
4. Combine cream cheese, 1/2 cup of sugar and 3 tbs of reserved peach juice; beat with electric mixer for 2 minutes.
5. Spread evenly over the top of peaches,leaving 1 around the edge. Combine 1 tbs of sugar with 1/2 tsp cinnamon and sprinkle over the top.
6. Bake at 350 degrees for 30-35 minutes.
