Peaches And Cream Corn Chowder |

A variation of the traditional favorite, this corn chowder is low in fat and salt and ready in minutes for a hearty winter supper. Serve with thick slices of French bread or whole wheat bread Ingredients:
2 cups unsalted chicken broth or water |
1 medium onion, finely chopped |
2 cups potatoes, peeled and diced |
1 large carrot, peeled and grated |
3 cups peaches and cream frozen corn (or your favorite variety) |
2 cups 2% milk (or 2% condensed milk, or 1 cup of each) |
1 tsp salt, or to taste |
1/4 tsp pepper, or to taste |
1/2 cup old cheddar cheese, grated |
2 tbsp fresh parsley, chopped |
Directions:
1. Pour chicken broth or water into a large saucepan and bring to a boil. 2. Add onion, potatoes and carrot and return to boil. 3. Reduce heat and simmer covered for 8 minutes. 4. Add corn, return to boil and simmer covered for 5 minutes. 5. Add milk, salt, pepper; heat to nearly boiling. 6. Ladle soup into serving bowls; top each bowl with grated cheese and parsley. 7. Serve at once. |
