This can be made the night before serving and baked fresh the next morning for a beautiful summer breakfast or brunch. You could use other fruits but the peaches are especially pretty! This feeds 6 hungry people. Read more . From Alaska's North Country Castle B&B Ingredients:
4 t butter |
1 1/4 cup milk |
1 1/2 t corn syrup |
3/4 cup brown sugar, firmly packed |
3/4 tsp pure vanilla extract |
4 large eggs, beaten til creamy yellow |
bread slices- can use any dense, mellow bread such as brioche, cut about 3/4 thick. need enough to fit the dish, laying side by side to cover |
dusting of cinnamon |
toppings: 6 t sour cream and 12-18 fresh peach slices |
Directions:
1. Melt butter in microwave in 9x13 baking dish 2. Add corn syrup and sugar to butter, heat briefly to melt 3. Stir, then heat til mixture is bubbly in baking dish 4. Top with the bread slices, filling the dish 5. Mix eggs, vanilla and milk and pour over bread 6. Dish with cinnamon 7. Cover and refrigerate 1 hour or overnight 8. Bake, uncovered in preheated 350 degree oven for 45 minutes or until knife inserted in center comes out clean 9. To serve, loosen edges of bread from pan sides with knife blade 10. Cut into individual size servings and invert on cookie sheet so caramelized sugar is on top 11. Using spatula, place individual serving on a plate and top with 1 T sour cream and some peach slices 12. Dust again with cinnamon and serve hot with a side of sausage or peppery bacon |
