Peaches are not to far away...and this is a simple yet delicious peach tart that looks impressive. Ingredients:
4 very large sweet peaches |
1 10-inch tart shell, prebaked and cooled |
apricot glaze |
1 cup apricot preserves |
2 tbl. grand marnier |
Directions:
1. Peel the peaches by putting them in a large pot of boiling water and removing them with a slotted spoon as soon as the water returns to a boil. 2. When they are cool enough to handle, peel and halve each peach lengthwise and remove pit. 3. Place each half on a cutting board and cut crosswise into 1/4-inch slices, not cutting all the way through. 4. Arrange the cut peach halves in the baked shell to resemble a flower. 5. To make apricot glaze: 6. Melt the preserves with the Grand Marnier. 7. Strain it and reduce until slightly thickened. 8. Lightly brush the peaches with the glaze and let cool. |
