8 ripe peaches, coarsely chopped (about 3 pounds) |
1 small red pepper, cut into 1/4 inch dice |
2 green onions, chopped |
1/4 cup peach jam or 1/4 cup apricot jam |
2 tablespoons balsamic vinegar |
2 tablespoons olive oil |
Directions:
1. In large bowl, toss ingredients until combined. 2. Cover and refrigerate until ready to serve or up to two days. |
