Peach Salad With Cumin Dressing |

Coooking Light magazine, Jan/Feb 2005. Notes: Thaw the peaches and pat them dry with paper towels to remove excess moisture. Pairing the fresh raspberries with the frozen peaches makes this taste like a fresh fruit salad. Ingredients:
2 cups sliced frozen peaches, thawed |
1 cup thinly sliced seeded peeled cucumber |
1/2 teaspoon grated lemon zest |
1 tablespoon fresh lemon juice |
2 teaspoons minced fresh mint |
2 teaspoons honey |
3/4 teaspoon cumin seed, toasted and crushed |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
1/2 cup fresh raspberry |
Directions:
1. Combine first six ingredients in a bowl, tossing gently. 2. Combine cumin, salt, and pepper; sprinkle over peach mixture. 3. Add raspberries, and toss gently to combine. 4. Serve immediately. |
