Peach, Plum, Nectarine, or Cherry Filling |

Quick and easy pie or tart filling from Everyday with Rachael Ray. Ingredients:
2 lbs peaches or 2 lbs red plums or 2 lbs nectarines, sliced or 1 1/2 lbs cherries, stemmed and pitted |
1/2 cup sugar |
2 tablespoons fresh lemon juice |
1 tablespoon cornstarch |
1 tablespoon unsalted butter |
Directions:
1. In a large bowl, toss the fruit with the sugar, lemon juice, and cornstarch. 2. In a heavy saucepan, melt the butter over medium heat. 3. Add the fruit mixture and bring to a boil, stirring often, about 5 minutes. 4. Lower heat and simmer, stirring often, until thickened, about 10 minutes; let cool. |
