This is not your ordinary peach pie, one of differences is in the crust which can be made a day ahead. Ingredients:

2 egg whites, room temperature |
pinch salt |
1/8 tsp cream of tartar |
1/2 cup sugar |
1/2 cup pecans, chopped |
1/2 tsp vanilla extract |
filling |
1 (3 ounce) package cream cheese |
1/2 cup powdered sugar |
1/2 tsp almond extract |
1 ( 9 ounce) container whipped topping |
1 ( 16 ounce) can peach slices, drained |
Directions:
1. Crust: 2. Beat egg whites slightly. Add salt and cream of tartar. 3. Beat until soft peaks form, gradually adding sugar 2 tablespoons at a time. 4. Fold in nuts and vanilla extract. Pour into buttered 9-inch pie pan, spreading evenly over bottom and sides. 5. Place in cold oven. Bake 40 minutes at 300 degrees, or until lightly browned. This may be made the day before serving. 6. Refrigerate. 7. Filling: 8. In bowl of electric mixer, blend cream cheese, sugar, and almond extract; add whipped topping. Fold in peach slices. 9. Pour into pie shell and chill. |
