1. Pre-Heat Oven to 350. Finely crush Saltines with rolling pin. Set aside. Beat egg whites until stiff. Slowly add sugar. Fold in crushed saltines. Add baking powder and vanilla. Stir in Pecans. Pour into greased and flowered pie tin or pyrex pie plate. Bake for 30 minutes. Cool. Top with sliced peaches. The riper the better and tastier. Top with Cool Whip. You can add some additional sliced peaches on top for decoration if desired. Chill overnight or a minimum of six hours.
